Paleo Chocolate Chip Cookies

Ingredients:
- 1 egg (room temperature)
- 1 teaspoon vanilla extract
- 1/3 cup coconut oil
- 1/2 cup coconut sugar
- 1 cup almond or hazelnut flour
- 1/4 cup coconut flour
- 1/2 teaspoon baking soda
- 3/4 cup choc chips (diary free if required)
- Pinch of salt
Instructions:
- Preheat oven to 180C.
- Line a baking sheet and set aside.
- Melt coconut oil and set aside (should not be hot when adding other ingredients.)
- In a bowl mix flours, salt, sugar and baking soda.
- Whisk to mix and remove any lumps.
- In the cooled coconut oil add the vanilla extract and egg.
- Whisk until combined.
- Pour wet ingredients into dry and mix until dough forms.
- Fold in 1/2 cup of choc chips. (Use vegan chic chips if desired)
- Place table spoon amounts on baking tray and sprinkle a couple of extra choc chips on top of each cookie.
- Cook for 8-10 minutes or until golden.
- Cool on tray then remove to a cooling rack.
- Store in an airtight container once completely cold.
