Potatoe and Leek Soup


Ingredients:

  • 2 leeks white part chopped
  • 8-10 potatoes chopped
  • 3-4 garlic cloves crushed
  • 2-4 Tbsp olive oil
  • 10 cups stock
  • Salt and white pepper to taste

Instructions:

  1. In a large pot heat oil and slowly cook garlic for 5-7 minutes.
  2. Add leaks and cook until it is slow and not brown.
  3. Add remaining ingredients, except salt and pepper, and bring to the boil.
  4. Reduce and simmer until spuds can be crushed easily on the side of the pot. (about 30-40 mins)
  5. Turn off heat and blend with stick blender, until all combined and smooth.
  6. Add salt and white pepper to taste.
  7. Serve with crusty bread if desired.
