Potatoe and Leek Soup

Ingredients:
- 2 leeks white part chopped
- 8-10 potatoes chopped
- 3-4 garlic cloves crushed
- 2-4 Tbsp olive oil
- 10 cups stock
- Salt and white pepper to taste
Instructions:
- In a large pot heat oil and slowly cook garlic for 5-7 minutes.
- Add leaks and cook until it is slow and not brown.
- Add remaining ingredients, except salt and pepper, and bring to the boil.
- Reduce and simmer until spuds can be crushed easily on the side of the pot. (about 30-40 mins)
- Turn off heat and blend with stick blender, until all combined and smooth.
- Add salt and white pepper to taste.
- Serve with crusty bread if desired.
