Potatoe and Leek Soup

Ingredients:
- 2 leeks white part chopped
- 8-10 Potatoes chopped
- 3-4 garlic cloves crushed
- 2-4 TBsp olive oil
- 10 cups stock
- S and white P to taste
Instructions:
- In a large pot heat oil and slow cook garlic for 5-7 minutes.
- Add remaining ingredients, except salt and pepper, and bring to the boil.
- Reduce and simmer until spuds can be crushed easily on the side of the pot (about 30-40 mins.
- ) turn of heat and blend with stick blender, until all combined and smooth.
- Add salt and pepper to taste.
- (Re-heat if necessary.
- ) Serve with crusty bread if desired.
