Potatoe and Leek Soup


Ingredients:

  • 2 leeks white part chopped
  • 8-10 Potatoes chopped
  • 3-4 garlic cloves crushed
  • 2-4 TBsp olive oil
  • 10 cups stock
  • S and white P to taste

Instructions:

  1. In a large pot heat oil and slow cook garlic for 5-7 minutes.
  2. Add remaining ingredients, except salt and pepper, and bring to the boil.
  3. Reduce and simmer until spuds can be crushed easily on the side of the pot (about 30-40 mins.
  4. ) turn of heat and blend with stick blender, until all combined and smooth.
  5. Add salt and pepper to taste.
  6. (Re-heat if necessary.
  7. ) Serve with crusty bread if desired.
