Quick Chicken Pho

Ingredients:
- 5cm ginger peeled and sliced
- 2-4 garlic cloves crushed
- 2 star anise
- 1 TBsp soy sauce
- 1 TBsp fish sauce
- 2 chicken thighs
- 150 gms Thai rice noodles
- 100 gms bean shoots washed
- 1/4 cup mint leaves washed
- 2 spring onions chopped
- 1 red chilli sliced
Instructions:
- Combine ginger, garlic, star anise, soy and fish sauce with 2 cups of water.
- Bring to boil rapidly then reduce to simmer.
- Mean while prepare herbs and vegetables then set aside.
- Add chicken and simmer for 10 minutes then remove to a plate.
- Remove ginger and star anise from broth.
- Discard both, then add chicken stock to broth and bring to the boil.
- Mean while cook noodles per instructions and shred chicken fillets.
- Once noodles are done seperate between 4-5 bowls, ladle over broth then sprinkle over chicken.
- Add all other ingredients in a decorative way and serve immediately.
- Recipe can be doubled.
