Quick Kale Soup


Ingredients:

  • 1-2 TBsp olive oil
  • 2 garlic cloves crushed
  • 1 carrot diced
  • 2 celery sticks diced
  • 3 bacon rashers diced (leave out if you want to have it vegetarian)
  • 3-4 thyme stems
  • 2 bay leaves
  • 4-6 cups water
  • 3 stock cubes
  • 1 can lentils rinsed and drained
  • 1 kale washed and chopped

Instructions:

  1. Heat oil in pot and cook garlic, bacon, thyme, bay leaves, carrot and celery for 10 minutes on medium-low heat.
  2. Once done add water and stock cubes, bring to the boil and reduce to a simmer and cook for 10 minutes.
  3. Add lentils and cook for 5-7 minuets.
  4. Remove bay leaves and thyme stems then add kale and stir well.
  5. Serve hot with bread of your choice if desired.
