Quick Kale Soup

Ingredients:
- 1-2 TBsp olive oil
- 2 garlic cloves crushed
- 1 carrot diced
- 2 celery sticks diced
- 3 bacon rashers diced (leave out if you want to have it vegetarian)
- 3-4 thyme stems
- 2 bay leaves
- 4-6 cups water
- 3 stock cubes
- 1 can lentils rinsed and drained
- 1 kale washed and chopped
Instructions:
- Heat oil in pot and cook garlic, bacon, thyme, bay leaves, carrot and celery for 10 minutes on medium-low heat.
- Once done add water and stock cubes, bring to the boil and reduce to a simmer and cook for 10 minutes.
- Add lentils and cook for 5-7 minuets.
- Remove bay leaves and thyme stems then add kale and stir well.
- Serve hot with bread of your choice if desired.
