Raspberry Blondies

Ingredients:
- 125 gms butter
- 180 gms plaistowe white chocolate broken into pieces
- 3/4 cup frozen raspberries
- 3/4 cup caster sugar
- 2 teaspoons vanilla extract
- 2 eggs whisked
- 1 cup flour sieved
- Icing sugar to serve
Instructions:
- Heat oven to 160 C.
- Grease a 18x28x4cm dish with butter and cover with grease proof paper, then set aside.
- In medium pan melt butter completely then pour in chocolate pieces.
- Stir until all pieces are melted and mixed together with the butter.
- Remove from heat and stir in sugar and vanilla essence.
- Pour in beaten eggs and stir until all combined.
- Sift flour over pot and stir until all combined.
- Pour in prepared dish and smooth over top, sprinkle raspberries over the top and push them in the mixture with your finger.
- Cook for 30-40 minutes or until golden on top.
- Remove from pan and place on cooling wrack.
- Sprinkle with icing sugar and cut into pieces.
- Serve warm or cold.
- Once cooled completely store in an air tight container.
