Reginas Rum Cake


Ingredients:

Cake:
  • 1 Yellow/Butter cake mix
  • 1 Vanilla pudding mix
  • 4 eggs
  • 1/2 cup oil
  • 1/2 cup rum
Sauce:
  • 1/2 cup rum
  • 3/4 cup sugar
  • 125 gms butter
  • 1/2 cup water

Instructions:

Cake:
  1. Preheat oven to 160C and grease a ring cake tin and set aside.
  2. Mix all ingredients in a medium bowl for a few minutes with an electric mixer.
  3. Pour into tin and bake for 45-60 minutes or until skew come out out clean.
  4. Remove from oven and prick the top with a skew, all of over the cake.
Sauce:
  1. Heat all ingredients in a small saucepan until all are melted and combined.
  2. Stir a few times while cooking.
  3. Pour sauce on cake while still hot.
  4. Leave in tin for one hour, then turn out on to a plate.
  5. Serve it warm or cold with cream and strawberries.
  6. You can sprinkle the top with a little icing sugar if desired.
