Rocket and Pine nut Salad

Ingredients:
- 100gms rocket leave mix
- 80gms sun dried tomatoes
- 60gms Parmesan cheese
- 1/4 cup pine nuts
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
Instructions:
- Place clean rocket leave mix on a platter.
- Cut sun dried tomatoes length wise and sprinkle over leaves.
- Toast pine nuts in fry pan, by continually stirring on high heat until chard slightly.
- Sprinkle over leaves, along with Parmesan that has been grated with a vegetable peeler to make long strips.
- Combine vinegar and oil in a small jar and shake well.
- Lastly pour this generously over the salad ( you may not need all of the dressing.)
