Rocky Road


Ingredients:

  • 500gms milk chocolate
  • 200gms dark chocolate
  • 4 x 55gm bars Turkish Delight
  • 400gms marshmallows
  • 1 1/2 cups peanuts chopped
  • 1 cup coconut
  • 1 cup Rice Bubbles ( use GF if required)

Instructions:

  1. Spray a 25x15cm tray with oil and push down baking paper to cover tray, then set aside.
  2. Chop Turkish Delights and set aside.
  3. Break apart chocolate into small pieces and melt in double pot until all melted.
  4. Set aside for five minutes.
  5. Stir in rice bubbles, nuts, coconut and Turkish Delight.
  6. Then stir through marshmallows and pour into prepared tray.
  7. Push to sides and smooth over the top a little.
  8. Cover then put in freezer for 1/2 hour.
  9. Remove from freezer then chop into bite size pieces.
  10. Store in airtight container.
