Salmon Fajitas

Ingredients:
- 1 TBsp oil
- 1 green capsicum chopped
- 1 onion chopped
- 1 packet fajita mix
- 1/2 cup water
- 1 can drained salmon
- 1 packet soft tortillas (GF if necessary)
- Cream cheese/ shredded lettuce/ chopped tomatoes to serve
Instructions:
- Heat oil in a fry pan and cook onion until soft.
- Add capsicum and cook for a few more minutes.
- Add fajita mix and stir well until all the veggies are coated.
- Add water and stir well, then add salmon (you can remove the bones before adding if you prefer.)
- Serve with heated tortillas with cheese spread over it and lettuce and chopped tomatoes.
- Roll up and enjoy!
