Simple Dahl


Ingredients:

  • 1 cup yellow split peas
  • 3 cups water or vegetable stock
  • 4-6 garlic cloves chopped
  • 4 inches ginger grated
  • 1 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon Garam masala
  • 1/2 teaspoon chilli
  • Salt to taste
  • Olive oil
  • Root veggies you have in your fridge chopped and frozen spinach

Instructions:

  1. Soak split peas over night then put on higher heat and bring to the boil.
  2. Cook for 20 minutes.
  3. Mean while heat some olive oil in a small fry pan and cook garlic then ginger for 3-5 mins add the spices and cook a further 2 minutes.
  4. Add a little water to the pan and add to split peas.
  5. Add all the veggies and cook until veggies are soft (about 30-40 mins.
  6. ) Add spinach and stir until completely mixed through.
  7. Serve with ancient grains and coriander sprinkled on top.
