Simple Dahl

Ingredients:
- 1 cup yellow split peas
- 3 cups water or vegetable stock
- 4-6 garlic cloves chopped
- 4 inches ginger grated
- 1 teaspoon cumin
- 1/2 teaspoon coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon Garam masala
- 1/2 teaspoon chilli
- Salt to taste
- Olive oil
- Root veggies you have in your fridge chopped and frozen spinach
Instructions:
- Soak split peas over night then put on higher heat and bring to the boil.
- Cook for 20 minutes.
- Mean while heat some olive oil in a small fry pan and cook garlic then ginger for 3-5 mins add the spices and cook a further 2 minutes.
- Add a little water to the pan and add to split peas.
- Add all the veggies and cook until veggies are soft (about 30-40 mins.
- ) Add spinach and stir until completely mixed through.
- Serve with ancient grains and coriander sprinkled on top.
