smoked salmon cucumber


Ingredients:

  • 1 finely chopped green onion
  • 2 tablespoons plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 tablespoons drained capers
  • 1 tablespoon chopped fresh dill, divided
  • 1 (12-ounce) package cold-smoked salmon, coarsely chopped
  • 3 English cucumbers
  • 1/8 teaspoon freshly ground black pepper

Instructions:

  1. Combine green onion, Greek yogurt, mayonnaise and capers in a medium bowl and stir to combine.
  2. Stir in 2 teaspoons dill and chopped salmon into the mix.
  3. Peel cucumbers in alternating vertical stripes and cut into 5mm thick slices.
  4. Scoop out seeds with a small spoon or melon baller, leaving bottom intact to form a cup.
  5. Spoon about 1 tablespoon salmon mixture into each cucumber cup.
  6. Sprinkle cups evenly with remaining dill and crack pepper over each round.
