Sophias Mums Lentil Soup

Ingredients:
- 375 gms brown lentils
- 2 bay leaves
- 2 cloves of garlic crushed
- 1 onion chopped (optional)
- 1 - 2 carrots chopped (optional)
- 1 cup passata sauce
- 1 TBsp Italian herbs
- 1/4 cup olive oil
- Vinegar or lemon juice to serve (optional)
Instructions:
- Wash lentils and place in a medium pot.
- Fill with water until lentils cover with about one knuckle over of water.
- Add garlic, bay leaves, carrot and onion.
- Bring to boil and simmer for 10 minutes.
- Add olive oil and passata sauce, herbs and salt and pepper to taste.
- Serve with lemon on side or a splash of vinegar if desired.
