Spanish Rice

Ingredients:
- Olive oil
- 2-4 garlic cloves crushed
- 1 red and yellow capsicum chopped
- 1/2 teaspoon chilli
- 1 1/2 cups medium grain rice
- 2 teaspoons paprika
- 2 teaspoons cumin
- 2 teaspoons coriander
- 400 gm can chopped tomatoes
- 1 cup chicken stock
Instructions:
- Heat oil in large pan then add garlic and cook for a few minutes.
- Add capsicum and stir until cooked, then remove from pan.
- Put all spices in fry pan and cook for a minute then add rice and stir until rice is coated.
- Return capsicum and add stock and tomatoes to pan.
- Bring to the boil then reduce heat to a simmer and cover for 25 minutes or until rice is tender and fluids absorbed.
- Set aside for 10 minutes then stir well and serve with American style ribs.
- Also great with tuna.
