Spanish Rice


Ingredients:

  • Olive oil
  • 2-4 garlic cloves crushed
  • 1 red and yellow capsicum chopped
  • 1/2 teaspoon chilli
  • 1 1/2 cups medium grain rice
  • 2 teaspoons paprika
  • 2 teaspoons cumin
  • 2 teaspoons coriander
  • 400 gm can chopped tomatoes
  • 1 cup chicken stock

Instructions:

  1. Heat oil in large pan then add garlic and cook for a few minutes.
  2. Add capsicum and stir until cooked, then remove from pan.
  3. Put all spices in fry pan and cook for a minute then add rice and stir until rice is coated.
  4. Return capsicum and add stock and tomatoes to pan.
  5. Bring to the boil then reduce heat to a simmer and cover for 25 minutes or until rice is tender and fluids absorbed.
  6. Set aside for 10 minutes then stir well and serve with American style ribs.
  7. Also great with tuna.
