Spiced Cake


Ingredients:

  • 2 1/2 cups flour (use GF if desired)
  • 2 teaspoons baking powder
  • 1 teaspoon bicarb soda
  • 2 teaspoons cinnamon
  • 2 teaspoons ginger
  • 1 teaspoon mixed spice
  • 1/4 teaspoon ground cardamon
  • 4 eggs
  • 1 cup caster sugar
  • 3/4 cup olive oil
  • 1 teaspoon vanilla essence
  • 3 cups grated carrot (1-2 carrots)
  • 220gms pineapple in pieces in natural juices
  • 1/4 cup reserved pineapple juice

Instructions:

  1. Preheat oven to 180C.
  2. Grease a 25cm spring form pan and place a piece of baking paper at the bottom.
  3. Sift flour, baking soda and bicarb soda into a large bowl and whisk to combine.
  4. In a separate bowl place eggs, vanilla, oil, sugar and reserved pineapple juice and mix well with a whisk.
  5. Pour wet ingredients into flour mix and stir until just combined.
  6. Stir in grated carrots and blitzed pineapple, mixed through until all mixed through dough.
  7. Pour into cake tin and cook for 45-60 mins, or until skewer comes out clean from the middle.
  8. Serve with butter or cream if desired.
