Spiced Cake

Ingredients:
- 2 1/2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon bicarb soda
- 2 teaspoons cinnamon
- 2 teaspoons ginger
- 1 teaspoon mixed spice
- 1/4 teaspoon ground cardamon
- 4 eggs
- 1 cup caster sugar
- 3/4 cup olive oil
- 1 teaspoon vanilla essence
- 3 cups grated carrot (1-2 carrots)
- 220gms pineapple in pieces in natural juices
- 1/4 cup reserved pineapple juice
Instructions:
- Preheat oven to 180C.
- Grease a 25cm spring form pan and place a piece of baking powder at the bottom.
- Sift flour, baking soda and bicarb soda into a large bowl.
- In a separate bowl place eggs, vanilla, oil, sugar and reserved pineapple juice and mix well with whisk.
- Pour wet ingredients into flour bowl and mix until just combined.
- Stir in grated carrots and blitzed pineapple, mixed through until all mixed through dough.
- Pour into cake tin and cook for 45-60 mins, or until skewer comes out clean from the middle.
- Serve with butter or cream if desired.
