Sues Brown Rice Salad

Ingredients:
Dressing:- 1/4 cup olive oil
- 3 TBsp soy sauce (GF if necessary)
- 1 lemon juiced
- Pepper to taste
- 2-3 cups brown rice cooked
- 1/2 cup sultanas (or substitute)
- 1/2 cup cashew (or substitute) slightly pan fried
- 1 chilli deseeded and finely chopped
- 2-3 spring onions chopped
- 1 red pepper chopped
- 1 can corn drained
- 1/2 cup seeds
Instructions:
Dressing:- Mix dressing in a small jar and shake.
- Pour over rice then add all other ingredients and stir to combine.
- This can be served hot or cold as a side or main.
- Mix all ingredients together and serve immediately.
