Sues Brown Rice Salad


Ingredients:

Dressing:
  • 1/4 cup olive oil
  • 3 TBsp soy sauce (GF if necessary)
  • 1 lemon juiced
  • Pepper to taste
Rice:
  • 2-3 cups brown rice cooked
  • 1/2 cup sultanas (or substitute)
  • 1/2 cup cashew (or substitute) slightly pan fried
  • 1 chilli deseeded and finely chopped
  • 2-3 spring onions chopped
  • 1 red pepper chopped
  • 1 can corn drained
  • 1/2 cup seeds

Instructions:

Dressing:
  1. Mix dressing in a small jar and shake.
  2. Pour over rice then add all other ingredients and stir to combine.
  3. This can be served hot or cold as a side or main.
Rice:
  1. Mix all ingredients together and serve immediately.
