Summer Quiche


Ingredients:

  • 1 large sweet potatoe
  • 1 TBsp olive oil
  • 1 hand full spinach chopped
  • 3-4 spring onions chopped
  • 1 tomatoe sliced
  • 8 eggs
  • 1/2 cup cream (optional)
  • salt and pepper

Instructions:

  1. Turn on oven to 180C.
  2. Prepare large pie dish by greasing with a bit of oil or butter and set aside.
  3. Slice the sweet potatoes with a mandolin or peeler into very thin slices.
  4. Place in a bowl with the olive oil and seasoning with salt and pepper.
  5. Toss with your hands until all slices are coated.
  6. Place a layer of the potatoes slices covering the enter pie dish, then continue another layer until all pieces are used.
  7. Ideally you want at least 2-3 layers thick of the sliced sweet potatoe.
  8. Place in over for 15 minutes and remove to cool.
  9. Meanwhile beat eggs and cream with a whisk.
  10. Mix in the spinach and spring onions.
  11. Season with salt and pepper and pour into pie crust.
  12. Place tomatoes on top and bake until centre cooked, about 30-40 minutes.
  13. Serve hot or cold with a side of salad.
  14. You can mix up the veggies to whatever you like or have in the fridge. You can also swap out the sweet potatoes for regular potatoes.
