Taco Mix


Ingredients:

  • 2 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 - 1 teaspoon chilli
  • 1 1/2 teaspoon garlic salt
  • 1 teaspoon oregano
  • 1 teaspoon corn flour
  • 1/4 teaspoon salt
  • 1 bag plain corn chips
  • 2-3 handfuls of grated cheese
  • 500 to 750 gms mince beef or 3 cans beans
  • 1 can corn or 1-2 corn cobs (remove the corn from the cob) optional
  • 1 can chopped tomatoes
  • 1 Tbsp tomato paste

Instructions:

  1. Mix all spices together and set aside. Heat oil in pan. Brown mince and then add canned tomatoes, tomato paste and corn. Lastly, add all the spices. Give it a good stir.
  2. If using beans, rinse and drain cans into one bowl. I like mixed, cannelloni and black bean, but use what you like. Add can tomatoes, tomatoes paste, corn and spice mix. Stir well to combine.
  3. Layer bottom of baking dish with meat or bean mix, which ever you are using.
  4. Pour corn chips over the top and cover completely.
  5. Sprinkle over grated cheese.
  6. Put in preheated oven (180C) for 20 - 30 minutes. Or until cheese melted.
  7. Serve hot with guacamole and sour cream if desired. You can also sprinkle over some chopped spring onions.
