Upside Down Banana Cake


Ingredients:

Cake:
  • 75gms butter
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1 teasp vanilla essence
  • 1/2 teasp baking soda
  • 4 bananas cut in half
  • 3/4 cup plain flour
  • 1/2 teasp baking powder
  • 1/4 cup coconut
  • 1/4 milk
  • 1 egg
Sauce:
  • 100gms butter
  • 1/2 cup brown sugar

Instructions:

Cake:
  1. Turn on oven to 160C.
  2. Prepare a baking dish by greasing it with butter and set aside.
  3. Melt butter for sauce in a small pan.
  4. Once completely melted add the sugar.
  5. Stir until melted.
  6. Pour in prepared dish, then place cut bananas on top, set aside.
  7. Beat butter in mixer until light.
  8. Add sugars and beat for 5 minutes.
  9. Add egg and vanilla essence and beat until combine.
  10. Add flour, coconut and baking soda then lastly milk.
  11. Beat until combined and push down sides a few times.
  12. Spoon over bananas and flatten with a large spoon.
  13. Place in oven for 30 minutes or until top is golden.
  14. Turn upside down on a dish and serve with ice cream or cream, if desired.
Sauce:
  1. Melt butter in a small pan and pour in sugar.
  2. Stir until sugar melted.
