Upside down cake

Ingredients:
- 3/4 cup brown sugar
- 2 medium bananas
- 185 gms butter room temperature
- 1 teaspoon vanilla essence
- 3 eggs
- 1 1/3 cup hazelnut meal
- 1/3 cup rice flour
Instructions:
- Preheat oven to 160C.
- Grease and line a 22cm cake pan.
- Sprinkle 2 TBsps of the brown sugar, evenly across the base.
- Cut bananas and cover bottom of pan evenly, then set the pan aside.
- Beat butter until pale, then add sugar and vanilla essence and mix well.
- Add eggs one at a time and beat well between each addition.
- Add rice flour and hazelnut meal and beat until just combine.
- Careful spread over bananas and smooth top.
- Cook for 45-55mins or until done (skewer comes out clean.
- ) Cool in pan for 10 minutes then turn out onto plate and leave upside- down! Once cool sprinkle with icing sugar and serve with thickened cream or ice cream.
