Upside down cake


Ingredients:

  • 3/4 cup brown sugar
  • 2 medium bananas
  • 185 gms butter room temperature
  • 1 teaspoon vanilla essence
  • 3 eggs
  • 1 1/3 cup hazelnut meal
  • 1/3 cup rice flour

Instructions:

  1. Preheat oven to 160C.
  2. Grease and line a 22cm cake pan.
  3. Sprinkle 2 TBsps of the brown sugar, evenly across the base.
  4. Cut bananas and cover bottom of pan evenly, then set the pan aside.
  5. Beat butter until pale, then add sugar and vanilla essence and mix well.
  6. Add eggs one at a time and beat well between each addition.
  7. Add rice flour and hazelnut meal and beat until just combine.
  8. Careful spread over bananas and smooth top.
  9. Cook for 45-55mins or until done (skewer comes out clean.
  10. ) Cool in pan for 10 minutes then turn out onto plate and leave upside- down! Once cool sprinkle with icing sugar and serve with thickened cream or ice cream.
