Vegetable Lentil Curry

Ingredients:
- 2 Tbsp oil
- 4 Tbsp green curry paste
- 2-4 garlic cloves crushed
- 200gm butternut and regular pumpkin chopped
- 1 sweet potatoe peeled and chopped
- 1-2 carrots chopped
- 2 cups red lentils
- 4 stock cubes
- 100 gms frozen spinach
- 4-6 cups of water (add one stock cube per cup)
- Add 6 cups if you prefer it more runny and 4 if not.
Instructions:
- Heat oil in a large pot and cook garlic for 2 minutes then add curry paste and cook for a further 2-3 mins.
- Add all other ingredients except spinach and cook until veggies are soft, about 20-40 mins.
- Add spinach and stir until completely mixed through.
- Serve with rice, yogurt and coriander sprinkled on top- Top Notch!
