Vegetable Lentil Curry


Ingredients:

  • 2 Tbsp oil
  • 4 Tbsp green curry paste
  • 2-4 garlic cloves crushed
  • 200gm butternut and regular pumpkin chopped
  • 1 sweet potatoe peeled and chopped
  • 1-2 carrots chopped
  • 2 cups red lentils
  • 4 stock cubes
  • 100 gms frozen spinach
  • 4-6 cups of water (add one stock cube per cup)
  • Add 6 cups if you prefer it more runny and 4 if not.

Instructions:

  1. Heat oil in a large pot and cook garlic for 2 minutes then add curry paste and cook for a further 2-3 mins.
  2. Add all other ingredients except spinach and cook until veggies are soft, about 20-40 mins.
  3. Add spinach and stir until completely mixed through.
  4. Serve with rice, yogurt and coriander sprinkled on top- Top Notch!
