White Sauce

Ingredients:
- 125gms butter
- 1/3 cup flour
- 500-600 mls milk
- Salt and white pepper to taste
- Nutmeg
- 1 Teaspoon mustard (if desired)
Instructions:
- Get all ingredients ready on the bench.
- In a small pot on medium to low heat, melt butter and add flour.
- Stir to make a paste and remove any lumps.
- Add milk approximately 1/4 cup at a time and stir until blended and it becomes slightly thickened.
- Keep adding milk in small amounts stirring constantly until it is all used.
- Add salt, white pepper and small amount freshly grated nutmeg.
- Stir well and add mustard if desired.
- You can also add 1/2-1 cup grated cheese to make a cheese sauce.
- Use immediately.
- Add to pasta or use in lasagna or even in pies.
