Zucchini and Sweet Spud Fritters


Ingredients:

  • 1 medium sweet spud grated
  • 2 zucchinis grated
  • 1/2 cup flour (use gluten free if desired)
  • 2 eggs
  • 1 garlic clove crushed
  • 3 spring onions chopped
  • salt and pepper to taste
  • Olive oil

Instructions:

  1. Mix all ingredients except olive oil in a bowl.
  2. Heat olive oil in a fry pan so it covers the entire surface.
  3. Once oil medium to hot then place 1 tablespoon amounts of mixture in the pan.
  4. Flatten down until about 1cm thick.
  5. Once golden brown turn over and cook until golden brown.
  6. Keep cooking until all the mixture is done, you may need to top up the olive oil as you continue.
  7. Once done drain on absorbent paper.
  8. Serve as a side or by themselves with dip or topping.
