Zucchini and Sweet Spud Fritters

Ingredients:
- 1 medium sweet spud grated
- 2 zucchinis grated
- 1/2 cup flour (use gluten free if desired)
- 2 eggs
- 1 garlic clove crushed
- 3 spring onions chopped
- salt and pepper to taste
- Olive oil
Instructions:
- Mix all ingredients except olive oil in a bowl.
- Heat olive oil in a fry pan so it covers the entire surface.
- Once oil medium to hot then place 1 tablespoon amounts of mixture in the pan.
- Flatten down until about 1cm thick.
- Once golden brown turn over and cook until golden brown.
- Keep cooking until all the mixture is done, you may need to top up the olive oil as you continue.
- Once done drain on absorbent paper.
- Serve as a side or by themselves with dip or topping.
